Revisit – banana sponge cake

5/11/15: I tries leaving it in the fridge overnight, only wrap the disposable tray with a foil. Leave it in room temp for 10min, it was still soft and moist.

i did this banana cake in Jul. It was a hit among the kids so I decided to revisit it and use brown sugar instead.
1 loaf for our snack and breakfast tml.
1 for hb to bring to work.
1 to share with my neighbor.

BANANA CAKE – make 3 loaf

Ingredients :

5 eggs – 65g including shell
125g brown sugar
200g banana (cut into cubes)
225g cake flour
3/4 tsp baking powder
1/2 tsp baking soda
150g corn oil

Methods:

Preheat oven to 170C.

Sieve cake flour, baking powder and baking soda together.

Use an electric stand mixer to whisk eggs, brown sugar and banana till ribbon stage.

Fold in the flour using a hand whisk and mix well. Don’t over mix.

Add oil into 1/3 of the batter in a separate bowl and mix well before adding to the rest of the batter. Mix until glossy.

Fill prepared baking pan (* i used disposable loaf pan) with batter and bake for 40-45 mins or until skewer inserted and comes out clean.

*pls take note 170degee is based on my oven thermometer reading..
